I need information on two jointly- held bank accounts. Also I want to find out why they were not listed in my grandmother’s will. Plus, I want to gather information about my dead grandmother from her landlord, e.g. why she was asked to move. Do I need a subpoena since they refuse to disclose anything, and how do I get one without an attorney? This problem is based in Delaware and I am not a beneficiary, but want to contest the will on the grounds of undue influence plus mental incapacity. How do I do that?

In reality you probably will not be able to move ahead without a lawyer, you will need to look up under Delaware law the elements required, and then file a complaint not easy
Also on the Joint accounts there is really nothing that can be done, since Joint Accounts do not pass through probate or subject to a will but pass directly to the other person named on the account
You will have to consider hiring a private investigator. Contesting a will would have to be done by an attorney. Courts generally follow the will unless there is absolute proof of wrong doing.
